Taste your way through Rabat's medina on a walking tour with more than ten stops, chosen to show the flavours, spices and street food that make up everyday Moroccan life. We wander through busy souks and quiet corners of the old city, stopping at family-run stalls, small eateries and hidden places most visitors never find on their own. Fire up your appetite with spiced merguez, the fiery red lamb sausages grilled over open coals, then try steamed cow head — lham rass — and sardines, fried or grilled. Taste jben, a soft mountain cheese, with amlou, a rich spread of almonds, argan oil and honey. There is tagine, dates paired with almonds, tangy pickles, and always another flavour waiting to be tried. For something sweet we finish with traditional Moroccan pastries — crunchy fekkas and delicate kaab el ghzal, the orange-blossom "gazelle horns" — with mint tea poured the traditional way. Along the way you meet the people behind the food: bakers, spice merchants and cooks who have run their stalls for generations. A walking tour of the medina with more than ten tasting stops, spread over three to four hours of easy walking on busy, flat streets.

Food & dietary notes: Vegetarian? Tell me when you book — many stops are meat-free, and I will swap the others. The same for allergies or anything you cannot eat.

Come hungry! There is a tasting at every stop, so pace yourself and be ready to try a bit of everything. Tell me about allergies or dietary needs when you book, and I will plan around them. We start in the late afternoon and finish after dark, when the medina is at its liveliest. You pay in cash on the day.
